Lentil Sliders

Serves 6

2 cups (450g) of cooked lentils
1/2 yellow onion, diced
1 teaspoon dried oregano
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
4 garlic cloves
11 stems of cilantro (coriander)
1 tablespoon tomato paste
Half of one red bell pepper
1 jalapeño
1 tablespoon flour
1 tablespoon veggie broth (stock)
1 pack of slider buns
Burger fixings (lettuce, pickles, tomatoes, cilantro, mushrooms, etc.)
1. Preheat the oven to 350 degrees fahrenheit (175 degrees celsius). Toss 1 cup (225g) of lentils and the diced onions with the oregano, cumin, smoked paprika, onion powder, garlic powder, salt and pepper. Set aside.

2. In a food processor or blender pulse the garlic cloves, then pulse in the cilantro, tomato paste, bell pepper, jalapeño and finally the remaining cup of lentils. The mixture shouldn't have only small chunks and be a little sticky, to hold the patties together.

3. Combine both lentil mixtures then add the flour and broth until they are fully incorporated. Form patties that will fit your slider buns.

4. Line a baking sheet with parchment paper and bake the sliders for 30 minutes at 350 degrees fahrenheit (175 degrees celsius).

5. Use the burger fixings to assemble the sliders on the buns and serve.
