Halloween fun for the young at heart
2 English muffins, cut in half
8 teaspoons meat- and dairy-free pizza sauce
4 slices non-dairy mozzarella*
3 green olives with pimentos or one small chili pepper
Preheat oven to 400 F (205 C).
Place the English muffin halves on a baking sheet and bake for 5 minutes.
Remove the muffins from the oven and spread 2 teaspoons of the pizza sauce onto each English muffin half.
Cut each cheese slice into long, narrow strips and decoratively arrange them on top of the English muffins.
Slice the green olives or the pepper into 1/4 inch-thick rings and place them on top of the cheese to create eyes. If making mummies in the morning to eat later in the day, after this step place the muffins on a plate, cover them loosely with tin foil, and refrigerate until ready to continue.
Bake the mummies for 3 more minutes, or until the cheese is melted.
*Some brands to try are Tofutti, Follow Your Heart, Galaxy Nutritional Foods, or Daiya. We used Galaxy Nutritional Foods' mozzarella flavor soy vegan slices.
