Eggless Egg Salad

An old standby with a new twist

Serves 6

1 14-ounce (400g) package firm tofu
1/2 cup (115g) eggless mayo such as Vegenaise or Nayonaise 

2 tablespoons mustard

1/2 teaspoon turmeric

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 cup (115g) diced scallions (spring onions) 

1/2 cup (115g) shredded carrots

pinch of salt and pepper

Drain and mash the tofu. Mix well with the mayonnaise and spices, and then add the scallions, carrots, and salt and pepper. Serve on a bed of lettuce or as a sandwich spread.
