Veggie Club Sandwich

You Won't Believe It's Vegan by Lacey Sher and Gail Doherty

  • Enjoy a special lunch with this club sandwich, served up with fries or chips and a pickle. Meredith Lee/For The HSUS

Serves 1

3 slices whole-grain bread
Vegenaise mayo or similar sandwich dressing
2 slices baked tofu
3 slices tempeh bacon
2 slices Daiya cheddar-style cheese (optional)
2 slices tomato
2 leaves lettuce

Heat up the baked tofu if desired. Fry or warm the tempeh bacon.

Lightly toast the bread. Spread each slice with Vegenaise to taste.

On the bottom slice, lay one or two pieces of tofu and, on top of that, three tempeh bacon strips. Add sliced Daiya cheese if desired.

Cover with the middle slice of bread, and layer on the tomato and lettuce.

Cover with the last slice of bread and slice diagonally into two or four triangles, using toothpicks to keep the layers together.
