Easy Baked Acorn Squash

Serves 2

1 acorn squash, cut in half, seeds removed
1 cup (225g) approximately applesauce
Earth Balance or other vegan spread
cooking oil
allspice, to taste
cinnamon, to taste

Pre-heat the oven to 375 F (190 C).

Rub the inside of each squash half with the margarine. Sprinkle allspice on each half. Bake face down on an oiled cookie sheet for 30 minutes.

After 30 minutes, flip each half over so the inside faces up. Fill each half with applesauce and sprinkle with cinnamon. Bake for another 30 minutes or until the squash is tender.
