Quick White Bean Chili
1/2 cup (115ml) vegetable broth
1/4 onion, diced
2 cloves garlic, minced
1/2 cup (115ml) green salsa
1/2 tsp chili powder
1/2 tsp ground cumin
1/2 tsp coriander
1/2 tsp oregano
1 15-ounce (420g) can white beans
Salt and pepper, to taste
Baked sweet potatoes
Garnishes such as cilantro or green onion
1.Pour a small amount of vegetable broth into pan over medium-high heat. Add garlic and onion and saute about 4 minutes, adding more broth if it evaporates before onion is translucent.
2. Add green salsa, stir, then add spices and beans, stirring again to combine.
3. Add broth until chili is desired thickness.
4. Reduce heat, cover, and simmer about 5 minutes.
5. Ladle into bowls or over baked sweet potatoes that have been split lengthwise and spread apart. Top with you choice of avocado, cilantro or chopped green onion.
